1.  What time is it now?

Or, worst case scenario, the truth. If you find yourself over your head,
gracefully back away and recommend someone else if you can.

Or, take the bull by the horns, offer to do your best rookie job (tongue in
cheek), and offer to forego payment if they're not satisfied - I think
you'll be surprised.
