It depends on the insurance policy the customer has. There are "replacement value" riders on most policies, which literally means the insurance company is required to provide a like item of equal value if the item is considered "irreparable", or if the cost of repairing exceeds the cost of replacing.  

When a piano is totaled, and the insurance company pays for a new piano, they then own the piano. They don't want it, so they will try to sell it for the best price they can get. If you're interested in buying that piano, call the insurance company,and see what they want.

Out of curiosity, since I have never been in this situation, if the piano is 
onsidered a total loss, does the insurance company give the owner an amount 
qual to the value of the piano as it was before the water damage.   How does 
hat work?   Obviously the owner wants as much as he can so he can replace the 
iano with another Steinway S or similar...does the insurance company have it 
ppraised?

Or, once it is written off as a loss then expectations can be more realistic
about whatever might be done with it at that time.  You certainly don't need
the responsibility of a full and complete restoration.  There isn't enough
money in it to take that liability.
