I would suggest you use a 15 degree knuckle and a number 2 medium tip.   You
might try a long number 2 tip for those places that you mentioned.
Personally I have a Number 2 long tip with a 15 degree knuckle in my tool
kit, because it is easier to change that way in the field.

The probability is very high the Watanabe tips will fit your new Schaff
lever.  I have not seen a 20 degree head from Schaff or PianoTek.  For 20

I've sold quite a few of the Watanabe tips.  They have much better fit and
consistancy than what I have seen of the recent Schaff tips.  If you are
just buying tips, I suggest getting them from PianoTek Supply

but must mark them up to cover costs.
