The problem I have with old boards isn't stiffness.  It is 
softness.  That is, crushed wood fibers no longer transmitting 
vibrations through the board.  Evidenced by loss of power and 
sustain, typically more obvious along cracks that close and open 
annually.  Actually Georgia is probably a lot better place 
comparatively when it comes to the quantity and average extreme of 
humidity swings.  High humidity alone is not a big wood problem (it 
is a metal problem), it is humidity cycling that causes the damage.

I know of a fine old upright in NM that was kept in a part of the 
house that was not evaporatively cooled.  It had beautiful tone.  It 
has since been moved to a more extreme, conditioned, environment.  I 
saw cracks this winter that were new.
