I'll second Avery on this.  When doing large pitch raises you will hear 
lots of beats, leaking from adjacent strings and sympathetically resonating 
from the  damped & undamped strings etc.
When an individual string beats prominently you may have seating problems 
at the v-bar, a kink in the wire, or a lack of seating on the 
bridge.  There is a beat suppressor sold for uprights which essentially 
allows you to "level" strings by pushing them where they bend over the 
v-bar and a brass drift or a maple hammer shank can be used to seat strings 
on the bridge around the bridge pins.

Utilization of ear plugs can help shut out a lot of exteraneous noise and 
make picking out the beats you are working with easier.
