Good question.  Being wedged up and dried out at the same time it will 
be pre-stressed to some degree to begin with, so when you let loose the 
wedges it will want to remain a bit more stressed (crowned if you will) 
then it would without the epoxy. Taking on moisture would probably at 
least re-enforce this condition in as much as the underside of the panel 
will respond as usual.  As to whether or not it would crown beyond this 
point... I suppose that would depend on the how much the epoxy really 
resists compression.  Might be a good way to find out the real 
effectiveness of this idea come to think of it.  It it crowns as readily 
as otherwise... then the epoxy doenst really have the advertised effect 
me thinks.
