  I sometimes get the impression people who do this or bang on one note and
say its flat are terribly insecure..and feel you know something they dont.
Their actions must justify their knowledge, thus make them feel superior.

  heh - I had one of those recently - questioning a "sharp" G, until I
explained to the client the full-length story of how proper octaves are
slightly stretched. The ironic part is that then the client called my
employer and complimented my tuning and wants me to go back to do some
action work (typical lube/ease/tightening stuff I didn't have time for due
to another appointment). A lot of it has to do with how graciously you
handle that kind of behaviour ;)
