Dave, if it were my project, I would avoid unnecessary trimming. If the overhangs do not rub against adjacent keys and the finished product creates an even and neat appearance, then I would not feel compelled to trim flush with the wood. Beware that the tails on F's and B's are actually narrower than the tails on C's and E's. That's right, take your calipers and measure those tails on some other pianos. Good luck on your project.
