That depends.  What kind of clientele do you want?  We need techs and
rebuilders/ reconditioners at almost every level -- those who serve the pickiest
clients, those who do average pianos and those who are willing to put the dead
ones on life support.  Well, maybe that's stretching it a little, but there's a
market out there for all levels.
