Is the color difference just that?  Color?  Or are there different grades
like hide glue?

Here's another link that'll take you to Jeff Jewitt's website.  If you're
not familiar with Jeff, he's one of the finest finishers I think you'll find
anywhere, and he sells a pretty extensive line of finishing supplies,
including (I think) 10 different grades of shellac!!  One of them is
supposed to be clear.
