Yeah, but what if you make mistakes, and the "good" piano turns out bad?

1929.

 
Why do you want to rebuild it? It looks pretty darn good as it is. 
I agree. 


If you want the experience, I would find a "cheap" grand to practice on first. 
It's been ten years since I've been involved in a piano rebuild at NBSS. I'm rusty. I thought the same thing. I'm taking a loan from a close relative, and this person says why not go for a good piano that will be more likely to sell well?
