If you watch carefully, you will see that these were all filmed first then recorded later and dubbed in. I believe they had someone play while watching Chico's antics, and match what he did very closely. It may even have been Chico doing it - just not the same performance that was in the film. There are times when notes are played and Chico isn't playing them, and vice-versa. So that explains that sound of the piano. But it's still great fun!
