Out of tune pianos on jazz and blues recordings; that's life. Don't dwell on them. If you want to learn something, listen often to the recordings  you have in your collection that have fantastic pianos. Example: anything recorded at the Rudy Van Gelder (jazz) studio always had a good sounding piano. Maybe not the greatest sound, but always in tune and well voiced. Some of my favorites are: Bill Charlip's "You Taught My Heart to Sing" with Houston Person on sax, Stan Getz and Kenny Barron, "People Time" which is a live recording, Diana Krall's "All For You" tribute to Nat King Cole, recorded in a New York studio. The piano is a Steinway from the concert pool of pianos at Steinway in NYC. I could give you  plenty of examples of recordings with out-of-tune pianos as well but why.

ALBERT AMMONS - Chicago In Mind I think you can click on this title and it should come up.  This is where my lack of computer knowlege comes in.  Check out the piano in this song.   Where were the piano tuners in Chicago back then? :-)
 
Here's another song from 1956  recorded by Jim Lowe called Green Door. I'm not sure if the piano was out of tune or they did this for the affect.  Jim Lowe - The Green Door
