Open fifths, no use of thirds or litres.
Phrygian mode in winter, Mixolydian (mixologist) for New Years Eve, 
Locrian mode for the bass and Æolian for Winter spinets.

(now back to bulk tuning for this weekend's "Dorian Music Festival" - 
1400 high school kids for three days of choral stuff)
