Drying time for wood

I was watching "How it's made" on the Discovery channel today-  they 
made electric guitars (Godin of Quebec http://www.godinguitars.com/). 
The wood used is dryed in a heated room for two months to 6% or lower 
moisture content.   After planks are glued together (glue adds water to 
the wood) they are dried again for two months.
Very interesting episode, It'd be great to see one of y'all making 
pianos on TV like that!
