My thoughts on why the pitch keeps going in the direction you are sending it is that the tension difference is either relaxing or increasing the tension on the soundboard and the board does not react as quickly as the pitch on the strings. Thus the pitch changes still , even after you stop tuning. This is another reason for regular intervals of tuning.
