Greg, my information is that cold hide glue does not have adequate strength for the board-to-rim joint. Hot hide glue is what was traditionally used in the factories, but they also had 12 guys standing around applying the glue, setting the board in, and clamping within just a few minutes. Hot hide glue will not have sufficient working time for one or two guys to install a board. If Del & Ron N. say Titebond II is great for this application, I would sure recommend using it instead of hot hide glue. And remember to wipe the inside of the rim below the board after you clamp!
