Lack of good taste? Or, perhaps, because Steinway uses them? Or, out of
habit?

It has been my observation that when some meaningless (in terms of
performance) feature first comes along and is used/marketed by some high-end
manufacturer--as with nickel plated tuning pins and/or polyester
finishes--that it soon gets picked up by others on down the food chain until
it becomes so common as to become tacky. Such has been the case with nickel
plated tuning pins and polyester finishes, at least.
