Dear John et al,
One way in which I have dealt with this in the past, was to send out 
reminder cards during the slower summer months, with a $5 or $10 
discount offer through July 31 or August 31. Now I just make sure I 
get reminder cards out during the summer (training my 14 year old 
daughter to do some office work), and no longer offer a discount.
I see no reason to give a blanket "summer discount" except to semi 
faithful customers.
As to premium rates, I would charge extra for "next day service", 
especially for venues that chronically forget to schedule in advance. 
One might apply the same logic to evening or weekend work, if you'd 
rather not be working at those times.
