Jim/Ron I noticed this aforementioned phenomenon when flying, and mused at the time that we must be high enough above the lake/water that it reflects a white light just as any smooth surface does when viewed at the "right" angle; much like reading the surface of a well buffed piano lid to see if all the flaws are out. No science here, just a finisher's ramblings.
