  I usually tell the truth :-)
To customers who really need to do massive work on their instrument and
refuse to have it done, yet want/expect their thingee to play and sound like
a concert instrument........................ "I really believe that you
deserve someone more attuned to your instrument and needs and I can no 
longer
provide that service for you."

For the customer that just can't afford a better, read workable,
instrument........."I will continue to provide service if you like but there
is really nothing more that can be done to improve/save this instrument
without replacing it."

For the customer who is just a massive pain and impossible to
please................"I will not service your instrument again but there 
are
other qualified techs in town, I am sure you will be happy with one of 
them."

Or some variation of the above but always to the point and factual..I don't
have a good enough memory to be deceptive :-)
