My daughter's piano teacher bills by the month in advance and charges late fees for payments paid after the 5th. She provides all of her students with a list of the other student's telephone numbers. If a student can't make a lesson, they are welcome to try to work out a trade with another student. If they don't, they just miss that lesson (and have already paid for it). This policy hasn't hurt her business, as she has to turn away students and is very selective in who she accepts. Wouldn't that be nice for a piano tech?!?!
