I also have used old organ pipe material for soundboard shims, gratefully given
to me by a pipe organ rebuilder nearby in Vermont.  It was definitely spruce,
"nicely" seasoned (100 years old), and nearly vertical grain.  He was glad to
find a user for what was, for him, scrap wood.
