I wouldn't probably change a set of capstans for purposes of reducing friction. There just isn't that much there to begin with an it won't give you that much improvement for the cost (if that's your only reason for doing it). They are lighter and they don't need polishing so if you have to change a set anyway there's arguably a reason to use them. But not for the express purpose of reducing friction.
